First thing first, make use of only natural things while cooking – No GAS, Electric utensils, Non-Stick pans, etc.
First you need to get Wood to fire, and not any kind of wood – it should be of Mango or Neem (Azadirachta indica) tree. If these trees are not available, then you can opt for Oak or Cherry wood.
Some important things here, Wood, which is freshly cut from the tree has 50% moisture. So, you need to get the wood, which is dry since it contains only 20 to 25% moisture. This will help in fast cooking.
Now you might be wondering where the hell I can get this wood, I only know how to cook on GAS… How in a flat or house I can cook with woods… its look very strange to me and of olden days…
Don't worry! We have a solution for you. This type of traditional cooking generally you don't do daily. It's reserved only for special occasions and family gathering and weekends with Friends, etc. So, you need to comprise on that front. Most people have their backyards where all family members can enjoy the cooking preparation or you can book a villa and so on…
Ok right to our cooking, you have good quality of wood. This wood has light to medium sweet flavor's which enhanced the cooked food.
Ingredients which you will require for cooking Golden Duck
Remember, it's the traditional way of cooking, which is important here apart from the secret ingredients.
For a Duck of 2 Kg, we need the following Ingredients.
1) 10 Red chilly ( better if its peri-peri)
2) 2 big pieces of Ginger
3) 3 big pieces of Garlic
4) 4 Table spoon Fenugreek seeds
5) 7 Bay Leaf’s
6) 2 Table spoon Turmeric powder
7) Bush Onion
8) 10 Green Cardamom
9) 10 Clove
10) 6 Basil leaf’s
11) 5 Star anise
12) Bush Nutmeg
13) Bush Black pepper
14) Cilantro Bush
15) Oregano Bush
16) Thyme Bush
17) Mustard Seeds
18) 6 Table spoon Cumin powder
19) 1 Bush of Tarragon
20) 5 Cinnamon sticks
21) Freshly cut Parsley 2 bundles
22) Lemon Grass
23) Rosemary Bush
24) Lavender Bush
25) Lemon Zest
26) 3 Fennel
27) 5
Table spoon hard rock Salt

Table Spoon Saffron Milk

Now let’s start the preparation.
Duck should be healthy and young. It should not be small
or too old else the meat will differ after cooking. So buy only Fresh young
duck.
Remove the fur completely. Make an insertion and remove
the waste material inside the intestine and clean it with water. Now I’m not going to talk much about how to
remove and clean… J
